This week’s box: (August 9th):
Red Onions & Sweet Onions: We’re beginning to harvest the storage onions just as the sweet onions are coming to an end.
Arugula (Large shares only): Try arugula pesto!
Savoy Cabbage: The cabbage just keeps coming even into August!
Fingerling potatoes: We love the beginning of potato season and fingerlings are such a short treat in summertime.
Pickling Cucumbers: You can eat these fresh. Many people say they are better than regular slicing cucumbers.
Salad Mix: What more can I say? We are in-between on head lettuce
Spinach: Spinach is back and so nice right now!
Zucchini and/or Summer Squash: You can eat it with every meal.
Garlic: Perfect to go with arugula pesto.
CSA Recipes for the Week: CSA Recipes for Week of August 9th
Farm Update for the week of August 9th:
We’re getting close to having enough tomatoes for the CSA next week. They are starting to ripen more and more and by next week, a lot of the plants will hopefully be in full swing. We’ve been doing a lot of maintenance around the farm lately –mowing, weeding, cleaning up and harvesting the wheat we grew this year. We should have a good yield. We’ll be using the wheat for our family, for our winter CSA members (information on this year’s winter CSA to come soon) as well as feed some to our poultry. It has been a great trial for us and I hope we can continue it in the rotation of vegetables. While it is August and we are approaching the outrageous abundance of the season, it also feels like the season is starting to change already and move into fall. It really is unbelievable how quickly this farming season has gone. Before we know it, we’ll have another baby in the family! Have a great week.
